Healthy Banana Cookies

I took a poll on Instagram when I first saw the Girl Scouts selling cookies outside of the Kroger here in Oxford. The majority of people said that Samoas were their favorite Girl Scout cookie! I am torn between Samoas and Thin Mints, but no one can deny that the combination of caramel and coconut with a shortbread cookie topped with chocolate is perfection. I started out making these cookies thinking they’d be a healthy alternative to Samoas, and I was going to call them “5 Ingredient Samoas.” They are REALLY good, but they definitely don’t hold a candle to the real thing. They’re tasty, but I decided to call them what they really are.

3 bananas, mashed

1 1/2 cups unsweetened coconut

1/4 cup brown sugar

1 cup whole oats

1 cup chocolate chips or chocolate melting wafers

  1. Preheat oven to 350 degrees.

  2. Mix bananas, coconut, brown sugar, and oats together. Use a small cookie scoop to scoop the cookie mixture into small bundles on a lined sheet pan.

  3. Bake until the coconut is golden and the cookies are firm, about 15-20 minutes.

  4. Microwave the wafers or chocolate chips for 30 seconds, then stir. Continue to microwave in 15 second intervals until the chocolate is fully melted. Drizzle the tops of the cookies with melted chocolate. Enjoy!

  5. Note: I stored these in the refrigerator after they cooled.
