Spicy Honey Teriyaki Salmon
I’m HERE for an easy, weeknight meal. I think one of the reasons people are intimidated by the kitchen is that they don’t have an arsenal of recipes that are easy, quick, good, and good for you. I realize for one recipe to check all those boxes can seem like a tall order. This one does just that, though! My husband isn’t the biggest salmon fan, and even he likes this dish. This recipe first made its debut when I was in college. It was so popular among my roommates that my dear friend and roommate, Maggie, very seriously told me that I was not allowed to make this unless she was present to enjoy it. I’m not sure I’ve ever had a recipe before (or since) that received such a high compliment.
Serves 2
~1 lb of salmon (I buy mine fresh at Kroger, and usually go for a filet that is an even thickness throughout)
1/3 cup soy sauce
1/3 cup teriyaki sauce
1/3 cup Worcestershire sauce
1/4 cup honey
1/2 teaspoon cayenne pepper
Sesame seeds, optional
Mix together soy, teriyaki, and Worcestershire in a small casserole dish. If your salmon is in one long filet, cut into 2 pieces. I cut the skin off of my salmon before marinating, but if you like the skin, leave it on and marinate flesh side down. I usually let mine marinate for about 15 minutes per side.
Heat 2 tablespoons of olive oil in a large nonstick skillet on medium heat until shimmering. Place the salmon in the pan, and on the side facing up, add a drizzle of honey and sprinkle of cayenne. Cook for about 3-4 minutes.
Flip and repeat the adding of the honey and cayenne on the other side. Cook another 3-4 minutes.
Salmon should have a crust on both sides thanks to the addition of the honey. Spoon any honey from the pan onto the salmon, and remove from the pan.
Top with sesame seeds (optional). I love to serve this with fresh veggies. You could do a side of roasted shishito peppers, roasted green beans, or even a bagged Asian style salad from the store. Easy, healthy, and ready in a flash. Enjoy!
